If you know me well, you’ll know that my favourite cakes/biscuits are Empire Biscuits! So I thought I would share with you the recipe I use to make them for myself!
What you’ll need:
100g Butter (Softened)
50g Caster Sugar
50g Icing Sugar
(extra icing sugar needed for icing cakes)
200g Plain Flour
100g Corn Flour
Jelly Tots for Top
Jam (I prefer raspberry)
What to do:
1. Preheat your oven to 170’C (Gas mark 4) Then begin by measuring out all the ingredients and then put the butter, margarine, icing sugar and caster sugar into a bowl. Beat these four ingredients together with a wooden spoon until the mixture is pale and creamy.
2. Put the plain flour and corn flour into a bowl and mix together. Then add the mixed flour to the sugar/butter mixture one table spoon at a time and beat/mix it all together. This will become more difficult when you add more and more flour, this is when you want to take it from the bowl and knead it together with your hands. This should form a soft pastry type dough.
3. Place the mixture on a floured surface and roll out with a rolling pin. It should be approximately 1cm thick. Then cut out the shape you desire with a cutter and place on a baking tray. Bake in the oven for 15-20 minutes until they are just starting to turn golden.
4. One baked, take them from the oven leave to cool down. Slowly add warm water to a small bowl of icing sugar until a smooth not-to-runny-not-too-thick constancy is created. Ice half of your biscuits and place a Jelly Tot in the middle. For the other half of your biscuits put half a tea spoon of jam on the underside then stick one iced biscuit to one jammed biscuit. Leave them to set for 20 minutes and then enjoy!
